The tannins are just beginning to knit themselves into what will become a silky texture and carry the wine forward for at least another 5-8 years in the cellar.
Perfect with Texas spice rubbed and grilled Porter-House steak, Potato Gnocchi pasta and tossed Mediterranean peasant salad. Try it with dessert of fig and raspberry cobbler a la French vanilla mode.
Vintage
2021 was a wonderful growing season to experience. The growing season, a full three to four weeks later than that of Napa or Sonoma, allows for a much slower ripening, increasing hang time and creating full concentrated flavors without over – ripening or depleting natural acids. A warm Summer followed by a mild September temperature allowed the fruit to ripen evenly while keeping its fine acidity.
Winemaking
Fermentation was conducted in a single open-top fermenter using only native yeast and no adjuncts. Aged for 18 months in French and American oak the wine was then bottled with a lighter filtration pad.

Dark ruby in color with deep, ripe aromas of black cherry and wild blackberry, with nuances of vanilla, fruitcake, mocha, and a touch of savory smoked meat. Layered fruit flavors with a plush, textural mouthfeel and good length. The tannins are moderate and silky, with well-integrated French oak. The overall impression is a big, voluptuous-yet-balanced mouthful of delicious flavors.

Deep garnet in color from the ripe 2018 vintage, with open aromas of lush fruit – plum, blackberry, and cherry, and notes of cedar, vanilla, and white pepper. Across the palate it's quite seamless and silky, rich and concentrated. The fruit flavors are bold and vibrant. Mouth-filling with smooth tannins, great texture and a long delicious finish.
Chewy & Ripe!
Dark purplish-black with aromas of ripe black plums, bacon, blackberry jam, and black tea. Dense, chewy and ripe across the palate with a nice mid-palate texture and weight. Rich, structured, and complex, with a long evolving finish.
